3 boneless skinless chicken breasts, sliced, and cooked through 1 can pineapple 2 tbsp oil 1 red bell pepper 1/3 c brown sugar 1/4 c soy sauce 1/2 tsp garlic powder 4 tsp corn starch 3/4 c water
Procedure: 1. Sauté the chicken until done. Set aside. 2. Combine the pineapple, including all juice, water, brown sugar, garlic, soy sauce, and corn starch in a medium bowl. Set aside. 3. Pour oil into a large skillet or sauté pan. Add bell pepper. Sauté on med-hi heat, until fork tender. Add the well mixed pineapple mixture and chicken. 4. Simmer for about 5 minutes until heated through and thickened slightly. Serve over cooked rice.
Makes 8, 1 cup servings.
