Skillet Lasagna

This is one of our family favs!!! Skillet Lasagne! Takes about 15 minutes and tastes almost as awesome as the real thing, baked lasagna, but still great on its own.



Ingredients: 12 oz rotini or penne pasta (I use a quinoa brown rice pasta) 24-28 oz pasta marinara sauce 1 lb ground turkey 1 cup cottage cheese 1.5 cup mozzarella cheese 1/3 c Parmesan cheese 1/4 tsp black pepper 1 egg

Procedure: Cook pasta according to package directions. Meanwhile, brown turkey and season with garlic and Italian seasoning. Add the marinara to the meat and simmer on low. In a small bowl combine egg, cheeses (reserving 1 cup mozzarella for the top) and pepper. When the pasta is done, drain and add to marinara and meat. Then drop the cheese/egg mix by spoonfuls evenly over pasta. Cover and simmer for 2-3 minutes. Uncover and slowly mix in the cheese mounds. Don't over mix. Sprinkle the remaining mozzarella over your skillet mix and cover for 2-3 minutes to melt.
